ILP Participation- Florida Food Handler's Certificate

I completed a mandatory food and drink handling course for a restaurant in which I previously worked at. All employees were required to complete this course. It is a law in Florida. The course I participated in costed my around $10. It took me a total of about 5 hours. (3 hours for food handling and safety regulations and 2 hours for an alcoholic beverage course.)
The food portion of the course included an online textbook which I was prompted to thoroughly read though. The textbook was broken into sections. The sections included how to handle meat properly, how to sterilize cooking tools, and how to handle allergens to ensure the safety of your customers. Handling meat is very important to the safety of the customers. Varying temperatures can greatly affect not only the quality of a meat, but also the bacteria that lives on the meat. For example, thawing meat, then re-freezing it can actually cause bacteria to duplicate on the surface of the meat. This can lead to sickness of customers. There are also many other aspect of meat handling that I learned through this course. Another important example is cross-contamination. A certain customer may be allergic to a type of meat, and using the same tools to touch other food with may cause a big issue and ultimately can cause a major lawsuit, not to mention very unhappy customers. The section of sterilization is similar. This section taught me how to properly clean cooking and storing tools for different foods. This section went into a lot of detail, for example, I learned how to deep clean a cutting board that has been scratched deeply by a sharp knife. It is incredible how many details of food handling I learned throughout this course that I never would have thought of without taking this course. My hope is that everyone working at a restaurant has also participated in this course or something similar in order to receive their proper food handler's license.
The alcoholic beverage portion of the exam worked in a similar way. I read through an online textbook first then eventually moved onto taking an exam. This portion had more to do with how to keep alcohol consumption safe and legal in the restaurant environment. This included learning how to properly check IDs and how to tell when to cut someone off. It also taught me how to handle a very drunk person in many different situations.
I think this section was particularly important because alcohol can be very dangerous and cause a big lawsuit in the long run. I had to deal with many drunk customers because the restaurant in which I worked at would turn into a packed bar by night. I think this course helped me tremendously.
